Why the Corned Beef?!

So why do we eat corned beef on St. Patrick’s Day? This story is interpreted in many different ways. However, there are a few facts similar between all stories. In summary, corned beef was never a common occurrence in Ireland before the Irish started migrating to America. When the Irish got off the boats in America, they enjoyed corned beef because the lack of beef in Ireland made the meat more of a luxury to Irish Americans. So the meat of choice for Irish immigrants was corned beef and this became a standard for generations to come.
