Chef Nevin's Green Bean Casserole
- 1/2 Stick Butter
- 1 Lg. Clove Chopped Garlic
- 3/4 Cup Shallots
- 8 Oz. Mushrooms
- 2 Tbsp. White Wine
- 2.5 Cups Chicken Stock
- 2 Lbs. Frozen Green Beans
- 1 Cup Heavy Cream
- 1/3 Cup Flour
- 1.5 tsp. + To Taste Salt, Kosher
- 1.5 tsp. + To Taste Pepper
- As Needed Fried Onions
Melt half the butter in a stock pot on the stove. Do not overheat.
Once the butter is melted, add the garlic and allow to become aromatic.
Next add the shallots and toss to coat in butter.
Cook shallots on medium until translucent. About 3-5 minutes.
Next add the rest of the butter, mushrooms, 1.5 tsp salt and 1 tsp. of pepper.
Turn heat up to medium high and cook until mushrooms stop releasing water.
Add white wine and reduce.
Next add 1/3 cup of flour and toss around the mushrooms coating all. Let cook for 1-2 minutes.
Then add the chicken stock while whisking vigorously until flour and stock have evenly blended.
Add the green beans and bring to a boil.
Pour in heavy cream, mix well, and bring back to a boil. Hold at a slight boil for 8-12 minutes or until sauce reaches a creamy consistency. Taste sauce and adjust salt and pepper as needed.
Transfer to your baking dish of choice and top with fried onions.
Place in oven and bake for 10-15 minutes.
